White Cake with Hot Fudge Topping

Phyllis Lister, The Pie Shop at 76067 owner, says this scrumptious white cake with hot fudge topping is a recipe passed down from her mother, Anita Williams. It’s the go-to birthday cake her loved ones can’t wait to gobble up.

“My mother used to make this cake with homemade hot fudge icing,” she said. “My family loves it and it’s really good. They always ask for it for their birthdays.”

Also known as the ‘Baking Lady,’ Phyllis has been serving up delicious treats for years. WHITE CAKE
2 cups sugar
1 cup butter
3 cups flour
3 tsp. baking powder
1 cup milk
½ tsp. salt
1 tsp. vanilla
1 tsp. lemon extract
6 egg whites
Cream sugar and butter till fluffy. Combine flour, baking powder and salt; add to creamed mixture alternately with milk. Beat egg whites till frothy and fold into batter with vanilla and lemon extracts. Bake at 325 degrees till toothpick inserted in cake comes out clean. Makes two, nine-inch pans.

HOT FUDGE TOPPING
½ cup butter4 squares unsweetened chocolate3 cups sugar
1 large can evaporated milk
¼ tsp. salt
Melt butter and chocolate together. Combine all ingredients in saucepan and bring to a boil. Reduce heat and simmer for seven minutes stirring often. Remove from heat and add vanilla and salt. Serve over white cake hot. You can save extra sauce to refrigerate and reheat.
